Composite video is a composite of source video signals including YUV, blanking pedestal, field, line, color sync and field equalizing pulses. Since all the components of the video signal are combined onto one signal wire, i.e. one composite signal, the resulting signal can be modulated onto a RF carrier.
The 2 most common types of composite video for security cameras are used with RCA and BNC jacks.
